BROWN POTATO WITH EGG SAUCE: BREAKFAST INSPIRATION!!!

I have been dulling on Irish potatoes for quite sometime sha, I haven't really thought about it being used for anything else aside meat pie filling. ( Check my meat pie recipe here)  I just found out about its gbaskiness few months ago and since then I have been chopping the life of my head with Irish potatoes.

Do you know that potatoes are quite a pack of nutritional punch ?! They are naturally fat-free, a source of fiber, potassium, salt-free, low in sugar and naturally saturated fat-free! Irish potatoes can offer enough energy for your body and supply enough fuel and energy that make it an ideal choice for people on a diet. As it acts as a rich source of carbohydrates.

Irish potatoes and egg sauce is an ideal and perfect breakfast combination. It is very simple and affordable to make. Irish potatoes is in season now and a basket go for as low as #400 so you can see that it is cost friendly too sha.

INGREDIENTS
  1. Irish potatoes
  2. Vegetable oil
  3. Green peppers
  4. Dark soy sauce ( hence, brown potatoes)
  5. salt to taste
  6. Eggs
  7. Onions
  8. Red peppers
DIRECTION
  1.  Chop the onions, green and red peppers and set aside.
  2. Peel the irish potatoes and set to boil for about 15 minutes, drain the water and set it aside. 
  3. With little oil, saute the boiled irish potatoes and keep stirring until the colour turns slightly brown
  4. Add the dark soy sauce and make sure the sauce is not too much to avoid it turning black and bitter.  ( about 1 teaspoon should be enough)
  5. Add the chopped green pepper and set aside.
FOR THE EGG SAUCE:  
  1.  Break the eggs and beat it for few minutes, the more you beat the more it rises while frying. (thank me later)
  2. Place the frying pan on heat and add vegetable oil, and allow it to heat for about 2 minutes.
  3. Add the chopped onions, green peppers and red peppers.
  4. Allow it to fry slightly and you can add seasoning. (Personally, I don't like putting seasoning in my fried eggs, I only put salt and face my front. But you can add thyme, curry and seasoning cubes)
  5. Pour the eggs into the sauce and allow it to fry.
  6. Egg sauce is ready!
