I took to my whatsapp stories to ask my contacts about their unpopular food opinions, some came with some hilarious opinions that I couldn't agree with- Why on earth would you say Eba is trash!?  Don't ever repeat that blasphemy again plis dear nor vex me.

While some gave some opinions I couldn't help but agree with- Fufu is trash... *nods head slowly*

So I decided to compile all of the food opinions I came across and I want to again emphasize the the fact that I DO NOT AGREE WITH ALL THE OPINIONS. Having said that, let's move on to the main koko:

JOLLOF PASTA RECIPE!!!

Hey Guys! Happy New Year. *smacks lips* You don't have to tell me to cover my face, I know. Can you imagine that this is my first  recipe post this year??? Please forgive me. Work has really been demanding and I am still struggling with this balance thingy.


 How body?! This is not a rhetorical question oh! How una dey true true?? I am just here feeling myself cos my last post has over a few hundred clicks and I am pretty excited that my blog is going international! *wiggles waist*

 Did you see my recent post on IG (missy_abimbola) where I posted a cake my mom made for a wedding? If not, you need to follow me so you can keep tabs on me and we can become best friends!!!

Pasta is like my go to food anytime I am feeling lazy, I mean it is so easy to cook and most importantly, it does not take forever to get ready. Another reason why I enjoy pasta is because of its versatile nature, it can fit in as breakfast, lunch or dinner.

So, let us get started, to the main KOKO of this post:




INGREDIENTS
1. One spaghetti pack - 700g
2. Vegetable oil - 2 cooking spoons
3. Onions - 1 medium sized.
4. Pepper mix- blended red bell peppers, tomatoes and ata rodo.
5. Ginger
6. Garlic
7. Seasoning cubes
8. Salt to taste.
9. Tomato puree



DIRECTIONS.
1. With medium/ high heat, pour in water, enough quantity to boil your pasta add one tea spoon of vegetable oil and salt to taste, immediately it comes to a rolling boil, add in your pasta.
NOTE- added oil helps to prevent it from being clumpy. Jollof pasta must not stick together, it is in the food constitution. 😉 
2. Cook till it becomes tender and drain it in a colander, pour in some cold water so the cooking process can stop and set aside.
3. With medium heat, pour in 1 cooking spoon of vegetable oil in a pot and add already sliced onion, grated ginger and sliced garlic, stir lightly until it becomes translucent
4. Add in the tomato pure and after 3 minutes, add the blended pepper mix and allow it to fry for about 3 minutes, till the oil floats to the top.
5. Add the already cooked pasta and stir vigorously, this step is a little tricky as you may need to add in water if the need arise. 
6. Allow to simmer for about two minutes and IT IS READY.

MY MENU PLAN!!!

I used to think I was going to be an Orobo while growing up, I mean I was quite chubby with fat cheeks so I already preconditioned my mind towards being an Orobo.You know this life is full of surprises. I eventually did not turn out to be OroboHalleluyah Somebody?!?!


You may begin to ask what I did differently? To be completely honest with you, I do not know. Might be because of my healthy eating habits or God is just good to me. LOL might be the later sha.


Although I have previously shared some of my  healthy feeding tips in my previous posts which I believe you must have checked it out, if you haven't, wyd Fam? So basically, I got a request from my amazing friend- Foyin to share my menu plan. But before I do that, I'd like to share the major reasons why this post is meant for you! 


These are the major reasons why I plan my menu: 


1 A Menu Plan Saves Money


This is the main reason why I started planning my menu. Eating out all the time is not affordable oh and my new year's resolution of saving tarty billion by the end of the year will not actualize. By planning your menu,  you know exactly what to shop for and buy everything in bulk instead of making unending trips to the market. It also helps to reduce impulse shopping to the barest minimum. Because lezz be sincere, nobody can stop impulse shopping 😥


#2   A Menu Plan Saves Time


You've heard of the saying- There's no time to check time. Yeah, No time at all, especially when you have a 9-5 and you're still begging God to increase to your number of hours to 42, because, plenty activities. Meal planning helps me to stay organized and efficient.


#3 A Menu Plan Helps to Avoid Stress.


If you know me very well, like very well, you'll know I have zero tolerance for stress. I avoid stressful situations and people like plague. Like please carry your wahala and go. Me I'm not even joking, so to avoid the stress that comes with racking my brain with what to cook and my intense desire to eat healthy, I plan my meals.


So let's get on to the main Koko


    


Monday: BREAKFAST - BREAD, TEA AND EGGS. 


LUNCH - SPAGHETTI WITH BEEF/CHICKEN


DINNER- BEANS AND PLANTAIN. 

Tuesday: BREAKFAST - BREAD AND BUTTER 


LUNCH: EBA AND GARNISHED OKRA SOUP. 


DINNER- SHARWARMA/CHICKEN AND CHIPS/PIZZA


Wednesday: BREAKFAST - AKARA AND PAP


LUNCH - YAM PEPPER SOUP 


DINNER - NATIVE JOLLOF RICE. 


Thursday: BREAKFAST - YAM AND EGG


LUNCH: STIR FRY NOODLES 


DINNER- BEANS AND POTATO/DODO.


 
Friday: BREAKFAST - PANCAKES/HOME MADE SNACKS


LUNCH: EBA AND EGUSI SOUP


DINNER- JOLLOF PASTA. 


 
Saturday: BREAKFAST - MOINMOIN AND PAP


LUNCH - FRIED RICE/JOLLOF RICE 


DINNER- YAM PORRIDGE 


 
Sunday:BREAKFAST- YAM AND EGG (  I honestly do not eat on Sunday mornings) 


LUNCH - RICE AND STEW.


DINNER-AMALA AND GBEGIRI WITH EWEDU. 

My menu plan is not rigid, I really do not enjoy swallows so you'll rarely find me eating pounded yam, semo or wheat. You'll find a lot of 'ebas' cos that's my favorite swallow. Anyway, you can decide to switch things up and replace accordingly as it suits you!  


There are so many other benefits of menu planning: you'll get to eat healthy, plan ahead, eat variety and over all look healthy.
