MoinMoin is one of the most popular breakfast staples in Nigeria. It is pronounced as Moin Moin, Moy Moy, Mai Mai or as I gladly call it Moyin Moyin *shines teeth* is a traditional Nigerian food made with steamed ground beans and enriched with spices. Finish.
Moyin Moyin is mostly served at parties, and usually eaten alone as meal or served with other meals. This delicious meal can be cooked in various ways and methods, although I prefer
cookng it in leaves. (Thaumatococcus daniellii) and I would really love to show you how! Enjoy!
INGREDIENTS
· 5 cups of Black eyed or brown beans
· 5 Tatashe( red bell pepper)
· 3 scotch bonnet pepper( atarodo/fresh pepper)
· 2 cooking spoonful Vegetable Oil
· 4 Tablespoonful ground Crayfish
· 2 large Onions bulbs
· Eggs OR deboned smoked fish OR deboned boiled fish and for reasons known to me, I just prefer boiled eggs.
· Seasoning cubes
· Ginger
· Water (as needed)
· Salt to taste
DIRECTION
1. Soak the beans for few minutes and wash it by scrubbing off the bean skin. Make sure all the bean coat is removed until it is white in colour.
2. Boil the eggs, remove the shells and slice into small sizes, then set aside. Then proceed to boil the fish,remove bones and cut into small pieces.
3. If you prefer Banana Leaves like me, proceed to wash it thoroughly and leave to dry in a colander, if you decide to use containers, grease the containers with vegetable oil.
4. Wash the peppers and slice the onions.
5. Grind the beans using a blender, it is advisable you do it in batches, add the peppers, onions, crayfish, and some ginger for some extra f-l-a-v-a-r-r-r
6. Add a little water to help the blender work better. And keep grinding until you get a smooth consistency without lumps. Make sure it is not watery.
7. Pour the blended beans into a wide bowl and keep s-t-i-r-r-i-n-g until the consistency is light. This would help to increase in size while steaming.
8. Proceed to add the vegetable oil, seasoning cubes, salt. Continue stirring till you're satisfied all the ingredients are properly mixed.
9. Pour the mixture into your containers and add your garnished meat or fish. Cover the containers and make sure it is well sealed. Proceed to line the base of your pot with foil paper and pour in some water and set to boil.
10. While boiling, place the moyinmoyin containers into the pot of boiling water and leave to steam.
11. If you're using banana leaves, gently fold the base of the leaves so as to form a hollow, then carefully bend the leaves and pour the mixture into it. Then line the base of your pot with some leaves, pour in some water and set to boil. Then repeat (10.) Above.
12. Make sure you add enough water to the pot, not too small so that it doesn't begin to burn underneath. Not too much to enter into the moyinmoyin and make it watery.
13. After about 45 minutes, the moyinmoyin should be ready, one major tip I use is to dip a knife into it, if it comes out clean then Voila! It is ready. If you are in doubt about whether the Moi moi is well cooked or not; it is advisable to leave it to cook for about one hour.
14. Proceed to take out the moyinmoyin from the pot and leave to cook a bit before unwrapping it.
15. Serve with Jollof rice, Pap, Garri or Bread!
There is a reason why I prefer calling it MoyinMoyin. Let me just quickly share it with you! *widegrin* It's because it's my younger sister's favourite food and her name is Moyin! LOL.
