MY MENU PLAN!!!

Abimbola Omole

I used to think I was going to be an Orobo while growing up, I mean I was quite chubby with fat cheeks so I already preconditioned my mind towards being an Orobo. You know this life is full of surprises. I eventually did not turn out to be OroboHalleluyah Somebody?!?!

You may begin to ask what I did differently? To be completely honest with you, I do not know. Might be because of my healthy eating habits or God is just good to me. LOL might be the later sha.

Although I have previously shared some of my  healthy feeding tips in my previous posts which I believe you must have checked it out, if you haven't, wyd Fam? So basically, I got a request from my amazing friend- Foyin to share my menu plan. But before I do that, I'd like to share the major reasons why this post is meant for you!

These are the major reasons why I plan my menu:

1 A Menu Plan Saves Money

This is the main reason why I started planning my menu. Eating out all the time is not affordable oh and my new year's resolution of saving tarty billion by the end of the year will not actualize. By planning your menu,  you know exactly what to shop for and buy everything in bulk instead of making unending trips to the market. It also helps to reduce impulse shopping to the barest minimum. Because lezz be sincere, nobody can stop impulse shopping πŸ˜₯

#2   A Menu Plan Saves Time

You've heard of the saying- There's no time to check time. Yeah, No time at all, especially when you have a 9-5 and you're still begging God to increase to your number of hours to 42, because, plenty activities. Meal planning helps me to stay organized and efficient.

#3 A Menu Plan Helps to Avoid Stress.

If you know me very well, like very well, you'll know I have zero tolerance for stress. I avoid stressful situations and people like plague. Like please carry your wahala and go. Me I'm not even joking, so to avoid the stress that comes with racking my brain with what to cook and my intense desire to eat healthy, I plan my meals.

So let's get on to the main Koko

Monday: BREAKFAST - BREAD, TEA AND EGGS.

LUNCH - SPAGHETTI WITH BEEF/CHICKEN

DINNER- BEANS AND PLANTAIN.

Tuesday: BREAKFAST - BREAD AND BUTTER

LUNCH: EBA AND GARNISHED OKRA SOUP.

DINNER- SHARWARMA/CHICKEN AND CHIPS/PIZZA

Wednesday: BREAKFAST - AKARA AND PAP

LUNCH - YAM PEPPER SOUP

DINNER - NATIVE JOLLOF RICE.

Thursday: BREAKFAST - YAM AND EGG

LUNCH: STIR FRY NOODLES

DINNER- BEANS AND POTATO/DODO.

Friday: BREAKFAST - PANCAKES/HOME MADE SNACKS

LUNCH: EBA AND EGUSI SOUP

DINNER- JOLLOF PASTA.

Saturday: BREAKFAST - MOINMOIN AND PAP

LUNCH - FRIED RICE/JOLLOF RICE

DINNER- YAM PORRIDGE

Sunday:BREAKFAST- YAM AND EGG (  I honestly do not eat on Sunday mornings)

LUNCH - RICE AND STEW.

DINNER-AMALA AND GBEGIRI WITH EWEDU.

My menu plan is not rigid, I really do not enjoy swallows so you'll rarely find me eating pounded yam, semo or wheat. You'll find a lot of 'ebas' cos that's my favorite swallow. Anyway, you can decide to switch things up and replace accordingly as it suits you!

There are so many other benefits of menu planning: you'll get to eat healthy, plan ahead, eat variety and over all look healthy.

So why not start a meal plan today?! You'll be glad you did. πŸ™

MY NATURAL HAIR JOURNEY! (ONE YEAR AND COUNTING)

Abimbola Omole

It has been one year since I started my natural hair journey, although I really cant remember the exact date my mom helped me with the big chop, I only know it was in the last week of the month of November, so I am celebrating throughout this week !😁😁😁😁😁😁😁😁😁😁

The journey has not been an easy one to be completely honest with you, I mean I have had my share of good and bad. Days my scalp will keep burning me like pepper or days where I look like a 16 year old because low cut. Let me just give you a little background story of my hair:

CHICKEN CURRY MADRAS RECIPE.

Abimbola Omole

It is no longer news that my best friend got married last weekend. She got married to the love of her life and the ceremony went down very well. Of course, yours truly was the chief bridesmaid and I carried out my duties diligently. To think that this is my first time doing this bridesmaid thing and I totally rocked the show!

Since she got married, I have been staying alone and even though I tried bribing my other close female friends to come stay with me, none of them agreed. I have been struggling with this but I know I will adjust, with time. Also, I am learning to embrace the isolation and get into full understanding that it is okay to be set apart.

Enough gist about me jareh! how una dey??

SPANISH OMELETTE RECIPE

Abimbola Omole

I love eggs. My sisters knows this. My mom also knows this. So you guys should also know this too.

How una dey? This September has started going very fast and I dunno what to do on my birthday. It is on a Sunday and should be a perfect day if well planned and celebrated. Me I have three wishes for the day and I shared it on my previous post. Check it here

See guys, I have been thinking of doing a very very very personal post on 10 things you should know about me and share it on my birthday so you guys can get to know me very well. It is just a way of daring myself to be more expressive to y'all, we are family now, shebi?

So back to my eggs matter, I have three recipes on eggs already and I want to share another one *In DJ Khaled's voice* this one is called SPANISH OMELETTE. It is a continental way of frying eggs so if you follow this recipe keenly and you try it out, you have turn to Madam continental niyen!😎

INGREDIENTS
  • Eggs
  • Onions
  • Tomato
  • Red pepper (optional)
  • Green pepper
  • Mushroom
  • Salt
  • Seasoning cubes.
  • Vegetable oil.

DIRECTION

  • Wash and dice your onions, green pepper, red pepper, mushroom and set aside.
  • Break your eggs and beat it for about 5 minutes, remember, the more you beat the eggs, the more it will double in size while frying.
  • Then proceed to add the diced onions, green pepper, red pepper, mushrooms into the egg mix. Keep stiring together.
  • Place your frying pan on heat and add vegetable oil immediately the pan is dry, do not put too much vegetable oil.
  • Then, add the egg mix to the frying pan, make sure the egg mix has spread to all corners of the frying pan. DO NOT STIR AT ALL.
  • As soon as the other side is done, F-L-I-P it over like the madam continental that you are.
  • Spanish omelette is ready.
  • I folded the omelette into four.

The only gift I want for my birthday is more likes on my facebook page, Edakun😭😭😭😭😭😭😭😭😭😭😭😭

EGUSI SOUP RECIPE

Abimbola Omole

Eyin temi bawo ni oh, shei wa??
Happy September #foodiefam! As you guys know that September is my birth month, I have started receiving birthday gifts, just so you know. I just have three wishes to fulfill on my birthday, would you love to hear them? LOL Oya let me share them with you:
  1. Cinema date with the LOML ( dont ask me questions! he knows himself)
  2. Full face makeover with photoshoots ( can you guys believe I have never had a full face make over?)
  3. A spa treatment. (With my best friend before she ties the knot with her lover)
Wishes do come through, right?
Egusi soup is one of my favorite soups, I honestly do not think I love any soup as much as I love Egusi. *shrugs* and my best friend can cook Egusi soup for Africa! She can close her eyes while cooking and the Egusi soup will still come out really nice!
There are so many ways one can cook Egusi soup (boiling or frying) I have seen so many methods and they all came out really nice! My elder sister once used a very different method in cooking it and guess who asked for second round? ME 😊
Personally, I prefer the frying method, *maybe it is the yoruba-ness in me* and I will be sharing the frying method of cooking Egusi soup with you:
INGREDIENTS
  1. 1 cooking spoon of palm oil
  2. 1 cup of grounded Egusi with cray fish (I grind it together)
  3. Chopped Ugwu leaves
  4. Pepper
  5. Onions
  6. Locust bean ( Iru)
  7. Seasoning cubes
  8. Salt to taste
  9. Dried stock fish/ cray fish
  10. Diced ponmo (for the culture)
  11. Salt to taste
  12. Fish or /and Meat
DIRECTION
  •  Because it is the frying method, you will need to boil the meat, fish and stock fish with ponmo thoroughly and keep it in a corner. Start boiling the meat first before adding the stockfish, ponmo and fish in that order.
  • When boiled, cut the stock fish into small chunks and dice the ponmo.
  • Pour 1 cooking spoon of the red palm oil into a dry pot and set on the stove to heat, add the onions and locust bean and proceed to add the pepper before adding the ground egusi mix and start frying. Allow it to fry till the egusi turns yellow. Keep stirring too, to avoid burning.
    • Proceed to add the meat/fish stock small small while still stirring the egusi. Just add as much stock you will need till you get your consistency, Make sure it is not too thick or watery. Then add the meat and fish, stock fish etc, and just allow to boil for 20 minutes. Egusi must be properly done or else, it will upset the stomach, and you can notice if it is done when the oil separates from the mix.

  • Then add your choice of vegetable, Ugwu leaves in my case.
  • After adding the vegetables, just allow it to simmer for about 5minutes.
  • Egusi soup is ready to be served!

      WATERMELON SMOOTHIE RECIPE.

      Abimbola Omole

A smoothie is a combination of two or three different fruits blended together. Lobatan.

Sometimes, all you need in a stressful environment is a very cold fresh juice that will relazz your navs, a natural fresh juice at that, I have a recipe here for Natural healthy drinks here.(ZOBO)

Ever since I moved up north, I have been a huge fan of watermelon, cos water melons here are very sweet and juicy, unlike those ones in the west. I buy it almost everyday and I have become the No 1 customer of the aboki in my street. *shines teeth*
