CHICKEN CURRY MADRAS RECIPE.
It is no longer news that my best friend got married last weekend. She got married to the love of her life and the ceremony went down very well. Of course, yours truly was the chief bridesmaid and I carried out my duties diligently. To think that this is my first time doing this bridesmaid thing and I totally rocked the show!
Since she got married, I have been staying alone and even though I tried bribing my other close female friends to come stay with me, none of them agreed. I have been struggling with this but I know I will adjust, with time. Also, I am learning to embrace the isolation and get into full understanding that it is okay to be set apart.

10 THINGS YOU NEED TO KNOW ABOUT ME- ABIMBOLA OMOLE.
So I feel I need my blog readers should get to know me more that's why I came up with this post, although you guys already know my name cos I mention it a lot, but it's not enough. Take it or leave it, we're family right now! And there's really nothing you can do about it. I'll forever famz y'all *shines teeth!
It's been two years blogging and I started initially out of boredom and my passion for Good Food and Healthy Feeding in Abakaliki, I didn't even really take it serious then so it was an 'on' and 'off' thing. I had good friends who helped me then, I won't mention names, but you guys are amazing....... And my blog mentors who I run to anytime I experience any hitch, you guys too gbaski!! *blows kiss

SPANISH OMELETTE RECIPE

I love eggs. My sisters knows this. My mom also knows this. So you guys should also know this too.
How una dey? This September has started going very fast and I dunno what to do on my birthday. It is on a Sunday and should be a perfect day if well planned and celebrated. Me I have three wishes for the day and I shared it on my previous post. Check it here
See guys, I have been thinking of doing a very very very personal post on 10 things you should know about me and share it on my birthday so you guys can get to know me very well. It is just a way of daring myself to be more expressive to y'all, we are family now, shebi?
So back to my eggs matter, I have three recipes on eggs already and I want to share another one *In DJ Khaled's voice* this one is called SPANISH OMELETTE. It is a continental way of frying eggs so if you follow this recipe keenly and you try it out, you have turn to Madam continental niyen!π
INGREDIENTS
- Eggs
- Onions
- Tomato
- Red pepper (optional)
- Green pepper
- Mushroom
- Salt
- Seasoning cubes.
- Vegetable oil.
DIRECTION
- Wash and dice your onions, green pepper, red pepper, mushroom and set aside.
- Break your eggs and beat it for about 5 minutes, remember, the more you beat the eggs, the more it will double in size while frying.
- Then proceed to add the diced onions, green pepper, red pepper, mushrooms into the egg mix. Keep stiring together.
- Place your frying pan on heat and add vegetable oil immediately the pan is dry, do not put too much vegetable oil.
- Then, add the egg mix to the frying pan, make sure the egg mix has spread to all corners of the frying pan. DO NOT STIR AT ALL.
- As soon as the other side is done, F-L-I-P it over like the madam continental that you are.
- Spanish omelette is ready.
- I folded the omelette into four.

EGUSI SOUP RECIPE

Egusi soup is one of my favorite soups, I honestly do not think I love any soup as much as I love Egusi. *shrugs* and my best friend can cook Egusi soup for Africa! She can close her eyes while cooking and the Egusi soup will still come out really nice!
There are so many ways one can cook Egusi soup (boiling or frying) I have seen so many methods and they all came out really nice! My elder sister once used a very different method in cooking it and guess who asked for second round? ME π
Personally, I prefer the frying method, *maybe it is the yoruba-ness in me* and I will be sharing the frying method of cooking Egusi soup with you:
INGREDIENTS
- 1 cooking spoon of palm oil
- 1 cup of grounded Egusi with cray fish (I grind it together)
- Chopped Ugwu leaves
- Pepper
- Onions
- Locust bean ( Iru)
- Seasoning cubes
- Salt to taste
- Dried stock fish/ cray fish
- Diced ponmo (for the culture)
- Salt to taste
- Fish or /and Meat
DIRECTION
- Because it is the frying method, you will need to boil the meat, fish and stock fish with ponmo thoroughly and keep it in a corner. Start boiling the meat first before adding the stockfish, ponmo and fish in that order.
- When boiled, cut the stock fish into small chunks and dice the ponmo.
- Pour 1 cooking spoon of the red palm oil into a dry pot and set on the stove to heat, add the onions and locust bean and proceed to add the pepper before adding the ground egusi mix and start frying. Allow it to fry till the egusi turns yellow. Keep stirring too, to avoid burning.
- Proceed to add the meat/fish stock small small while still stirring the egusi. Just add as much stock you will need till you get your consistency, Make sure it is not too thick or watery. Then add the meat and fish,stock fish etc, and just allow to boil for 20 minutes. Egusi must be properly done or else, it will upset the stomach, and you can notice if it is done when the oil separates from the mix.
