I was just on my own jejely when my taste buds started craving something different. You know how the thing dey be na? and an angel subscribed this awesome food to me.
So I decided to share it with you people. You can thank me larrrrrrraaaa
Gizdodo are coined names for a Nigerian dish prepared with a combination of gizzards and plantains(dodo).
Chicken gizzards are best used for this recipe, but you can also use turkey or duck gizzards. As for plantains, I prefer the yellow ripe plantains, not over ripe ones tho, so you don't end up with a less appealing meal.
GizDodo is also knows as gizzards and dodo, or Gizzdo, you can even come up with your funky name. It's just the normal gizzards and plantain with a yummy special twist. I hope to serve it as an appetizer on my wedding day! Wait on it!! (Lmao)
INGREDIENTS:
•500 grams of chicken gizzards
•1 ripe plantain
• 3 large fresh tomatoes
• 2 habenero pepper (atarodo)
• 1 red bell pepper (tatashe) optional.
• 1 teaspoonful ground crayfish
• 1 large onion bulb ( cut into 2 halves)
• 1 garlic clove
• Half teaspoon of curry and thyme
• 2 stock cubes
• Vegetable oil enough for frying.
For the garnish, you'll need:
• I green bell pepper ( chopped)
• 1 red bell pepper (chopped)
• 1 small red onions ( chopped)
Preparation Directions:
• Clean the gizzards by removing the yellow lining. Then wash the gizzards with salted water or lemon juice. Scrub well to get rid of any dirt. Then rinse the gizzards in running water, strain and set aside. Cut the cooked gizzards into smaller bite sizes.
• You might buy yours pre-packed, it is possible that the yellowlining won't be there, so simply wash in salted water.
• Place the cleaned gizzards into a pot. Pour enough water to half the level of gizzards. Season the gizzards with half onion bulb, garlic, one stock cube, thyme, curry and salt to taste. Cook until tender and set aside.
Gizzard is a tough meat, a muscle meat to be precise, most people think it doesn't absorb any seasonings while cooking, I highly recommend that you season them as much seasonings you are comfortable with. You'll be amazed at how tasty they can be.
• Cut the plantains into cubes, fry in hot vegetable oil until brown. Transfer into a sieve.
You'll need to resist the urge of throwing diced plantains into your mouth. Fried plantains got us all!!
Cooking Directions:
Fry the gizzards in the same oil until brown and transfer into a sieve lined with paper towels to absorb excess oil.
For a healthier option, grill the gizzards in the oven until brown.
Chop the tomatoes, peppers and blend coarsely.
Heat up some oil, add chopped onions, fry a bit and add the ground crayfish
Fry for 5 seconds and then pour the blended mix into a pot and fry for about 5-10 minutes.
Add the stock cube!
Salt to taste.
You'll knowthe sauce is ready when the oil rises to the top of the stew. Add the fried gizzards to the sauce and simmer for 1 minute to soak in the sauce.
By now, most of your neighbours will be wondering where this sizzling aroma is coming from, with watery mouths.
Add the fried plantains, chopped onions, green and red peppers. Mix thoroughly and putt off the heat. And your meal is ready! READY!
