Hello Foodie Fam!
Coconuts has been one of my favourite
fruit since childhood, my mom especially transferred her love of coconuts to
her children. And we quickly grabbed it! No time! So always count me in when
anything 'coconuty' comes up! *wide grin!
The love for coconuts in my house has
upgraded! So much that the only bread we eat is Captain Cook's Coconut Bread!
Yasss! Thanks to their numerous sales outlets (who else has noticed this nice
marketing strategy??) one is opposite my house sef, we go juz stroll and
buy coconut bread begin chow.
So as my darling Manager celebrated
her birthday, I decided to step up my coconut game by preparing this coconut
rice recipe I'm about to share with you guys!

§ 2 tablespoon Coconut oil
§ 2 large red onion (chopped)
§ Atarodo
§ Green pepper
§ White pepper
§ Green chilli
§ Chopped carrots
§ Seasoning cubes
§ Curry
§ Thyme
§ Ginger
§ Salt to taste
DIRECTIONS
1. Slice your Onions, green chilli,
green pepper, carrots and atarodo. It will be used later.
2. The next stage is to parboil the rice, pour the rice unwashed into pot

with a lot of water. Let the rice come to a boil till you can see
the creamy starch floating on top of the water and the rice has now the white
colour of boiled rice. Taste the rice and make sure it is firm before taking it
off the heat. Once the rice has parboiled, pour out all the water and then
proceeds to wash the rice with cold water to stop the cooking process.
3. Break the coconuts, extract the
flesh and cut in small pieces, blend properly till it's smooth and sieve the chaff
away from the coconut milk, run water through it about 2 to 3 times. To make
sure you've extracted them all. No wastage in this buhari economy *straightface*
In case you don't want to go through this stress, you can always buy
already processed coconut milk.
4. Place a large pot (with a good
fitting lid) on add in the coconut oil, (you can use vegetable oil too) wait
2mins, then add in the chopped onions, atarodo, green chilli and green pepper.
Allow to fry for about (3-4mins). Don't add all of them though; you'd need some
for later.
5. Add the spices, curry, thyme,
seasoning cubes, paprika, white pepper, yellow pepper, ginger and garlic. By
now, the aroma would be so niceeeeee!
6. Now add the parboiled rice, and
the coconut milk extract till it slightly covers the rice. Taste for seasoning
and add salt.
7. Cover the pot, reduce the heat to
medium to high and bring the
mixture to a boil and stir with a
wooden spoon.
8. Cover the pot tightly and leave
the rice to cook for 20 - 25 mins. When it's done, you can finally add the
chopped carrots, green pepper and green chilli for garnishing!
Serve and Enjoy!
Nom! Nom!! Nom!!!
You can even go funky with Coconut
rice and make it Jollof or Fried! Any which way, you're covered! It was so
delicious my Papa asked for more!! And it has definitely increased my bride
